Seriously, this is a great green smoothie to start your day! It’s jam packed with major nutrients, enzymes and alkalizing minerals to make you look and feel like a Vibrant Thang’! This smoothie recipe will boost your energy, immunity, and digestion for the day. We’ve got a bit of spinach, which is a great plant-based source of calcium, fiber and omega-3. Kale is fortified with iron, antioxidants, vitamins A, K, C and potassium. Even romaine lettuce, that’s also rich in Vitamin A, folate and magnesium. Two medium sized apples to give us a bit of sweetness to mask the bitterness of the green veggies. Now, if you’re just starting to step into the green smoothie game, add agave or a couple of Medjool dates to sweeten this recipe.
Add ice, if you like nice cold smoothies! I threw in a couple tablespoons of chia seeds to get in even more omega 3.
Load up your blender and blend baby, blend! Having a smoothie at the start of our day, sets the tone for your metabolism throughout the whole day. Blending your favorite dark leafy greens and fruits together allows you to maximum your nutrient intake. Because the food, is raw, blended and not chewed it gives our bodies a chance to really get all the amazing benefits. The vitamins of the fruits and veggies are quickly and easily absorbed by the body then they shoot through our bloodstream. The results are, instant! Seitan is a wheat gluten mock meat. It has about 18 grams of protein per every 3 ounces. The texture is really meat-like. The box in the photos comes in little chunks, but you can also get it in slices. I love stir frying it, adding some bell peppers and spice. Mushrooms, are a perfect meat substitute. They have that chewy and filling feel we associate with meat. Usually, I’ll add this to pasta dishes saute them along with a creamy sauce or marinara. I’ve been to a couple of vegan and vegetarian spots that will have a mushroom burger or fry oyster mushrooms like chicken. It just works so well!
Tofu, has been my go-to meat subby since before I was vegan, when I just dipped and dapped in a meatless dish or two. Half a cup of tofu contains around 10 grams of protein. It doesn’t really have a taste or flavor on it’s own. That makes it the perfect blank canvas for a spice master. It absorbs the flavor of whatever you dress it up with! You can fry it, saute it, or bake it. Try marinating it overnight in your favorite spice or sauce mixture. Then, after a few hours go for it!

OMG! One of the hardest things I had to walk away from when I became a vegan was cheese. I loved dairy cheese. Living in Texas, and giving up nachos was no easy feat. Recently, I stumbled across some pretty delicious vegan friendly “cheese” recipes. Sharing is caring, so I’m sharing this easy, but so delish vegan queso recipe with you. All you need is a blender to make it happen, captain!
Before blending soak your cashews in one cup of water for at least an hour. I usually soak mine overnight in the fridge, but an hour will be sufficient too. The soaking step simply ensures the cashews blend up smoothly in the queso. Blend, it up until it’s all smooth. Then, getting to dipping! Having an epic party with friends? Then, just double up on your ingredients to serve a few more people guilt-free vegan queso.
